Original cobbles - Advice needed

Hi

I have just lifted a layer of badly laid concrete in my back yard and found the original cobbles (and a few slab and brick infills) from the mid 1800s.

I now intend to keep the exposed cobbles as they are, but need to fill the gaps of the cobbles to make it more usable.

Please can you advise what would have been used traditionally to fill the gaps, as whatever was there is long gone. I would like to use traditional methods if possible, in keeping with the period.

I’m in Wets Devon, in an old mining are if that helps with material suggestions.
