One part of my project is a path beside the house. A certain size flag would fit exactly between the house wall and an existing kerb which I prefer not to disturb. That is, I would be pointing horizontally, between the slabs, but not vertically, beside the wall and kerb respectively. This is a passage between two houses and sheltered from most weather but not of course all.
So the question is: is this a bad idea, and if so, how bad?

I really wouldn't worry about it. In fact, if you can't point the longitudinal joints between wall/kerb and flag, why point the transverse joints between adjacenet flags?
This is only a path - you could probably get away with using either a dry mix or kiln-dried sand brushed into the joints.
