Brick edging a perennial  flower garden - Garden is on a hill, can this be done

Hi,
Great web site. I have a perennial flower garden and it is on a hill. The garden has a curving edge. I would like to put in 2 layers of soldier edging using a product like edgepro to hold the bricks in. The bricks will have to be cut because of the curves.

I was wondering if this could be done considering this will be done on a hill.
