Hello there, I am new to the board and hope someone can help me.

I want to construct a 250 metre farm track which is on flat ground. The track will run along along the edge of a field. What material should I be looking at laying? And to what depth should i remove the top soil?

Will a skidsteer loader do the job of removing the top soil? I could then borrow a roller to compact the track material. The track will be used in frequently by 4x4s and tractors.

I've not seen the site, so I could be wrong with this, but a fairly typical access track construction would be....

25mm gravel
100mm Type1 or Type2 granular sub-base
150mm Type2 or 75mm crusher run
geotextile (Terram 1000 or TDP115)

It's highly unlikely that a skidsteer would be sufficiently powerful to excavate to 275mm - get a JCB or preferably, a tracked excavator.
