Building a brick catch pit to stop all the soil going to the soak away. Using engineering bricks but as the mortar is going to be in water a lot of the time do I need to use a special mix maybe with pva in it or some waterproofing agent ?

No need for special additives, other than the usual plasticiser. Use a 4:1 mix based on a building sand - basically, a bog-standard bricklaying mix.
