Laying yorkstone setts - Variation in thickness

I have purchased 30 metres squared of Yorkstone setts.
The majority are 75 mm but a few are around 71 and some up to 80.
What variation in thickness can be accomodated when laying as block paving. Would you simply select all the larger 80 mm or 71 mm ones and lay in one area with a little less or more sand or is that not practical.I plan to use some of these for the soldier course where thickness is not such an issue.

To lay flexibly on a screeded laying course, you need a tolerance of ±3mm (±1.5mm really). Those setts are best laid individually.
