I wish to install a new drain in our side extension.
To connect to the sewers I need to lay a drainage pipe
from inside the house to outside the house, under
about 500mm of footings.
The main sewer takes the form of a 7" pipe.
Two questions:
How do I go about laying pipework under the footings?
I.e. type of pipe, re-inforcement.
Will it be possible to connect a plastic prefabricated
inspection chamber with 100mm input/output pipes to
the 7" main sewer?

A 7" main sewer? That's a new one on me. I can only assume you're measuring external diameter, so what you have is actually a 6" (150mm) dia pipe.
Tunnelling beneath footings is not something that shoukld be done by a DIYer. There are specialist underpinning and drainage contractors that have all the right equipment, and experience, to carry out this work without risking damage to the foundations of your property. I strongly recommend you use one of these.
The simpler option for DIYers is to pass the pipe through the wall - would that be possible on your project?
Assuming the 'main sewer' is a 150mm dia pipe, then it would be posisble to use a pre-fabrication IC base with 100mm inlets. you may need to use a couple of adapator coupling to change from old 6" to modern(ish) 150mm, but it is possible.
