Hi
We're having light grey indian (riven) sandstone slabs laid at the moment and our landscaper has advised we use a sweep in resin mortar. I am keen to find a light mortar so it isn't darker than the stone, however all of the grey resin options are quite dark.
Does anyone have any advice about what product we could use to get the type of finish in this image? light grey pointing

I'm not keen on the buff/sandy coloured pointing with the grey stone.

That looks like it could be either a proprietary cement mortar such as TuffTop or an outdoor grade tile grout.

Bear in mind that light-coloured jointing only remains light-coloured if you keep it meticulously clean. Left unattended, it will go mucky brown, like all jointing does eventually.
