Well,we hired a guy to build a patio for us(standard paving slabs,nothing fancy) and he seems to have done a good job eventually(many absences)all thats needed now is jet wash and sealant,hopefully he will get round to doing it.Is it essential?

NO! there are roman ,greek and victorian instances of stuff that has never been sealed
it all depends on your expectations

YES! There are also pavement areas adjacent to recently opened fast food outlets that are heavily stained - because it has never been sealed.
As LLL said it all depends on your expectations!

agreed! if you want it to stain pristine it needs sealing,but if you are not worried about the odd blob of fat,red wine or blood then dont seal
