I am thinking of putting down some Bradstone StoneFlair natural granite paving in Silver Grey. Am I likely to get issues with they being discoloured if I just use a normal damp gritsand/cement bedding layer?
(I am thinking of using close joints without any pointing)

Not likely but not worth the risk imo, slap a bond bridge down to make sure.

As above, Silver grey granite is very robust.
I would have a rethink on the no pointing. The stone will have cutting tolerances of +/- 2mm, absolute minimum. If your gap is less than 4mm you may find it difficult to get the clean lines you are trying to create. A 5mm gap will give you a far more contemporary look, and will not cause any problems during installation
