I'm intending to have a 28m2 patio laid in Indian stone. Some contractors have convinced me that they can supply flags that are smooth enough for a patio dining set not to rock. Others say exactly the opposite - that the riven nature is so unpreictable that they actually recommend manufactured alternatives. Is this due to the different qualities of the stone, and if so how do I maximise the chances of getting the best stone? If I do go for a manufactured version, Marshalls Chancery looks fairly smooth and realistic. Is this the best option for a natural looking patio? Any advice gratefully received.

all depends on your expectations
we try to avoid anything over 5mm as this is considered a *trip hazard*
i generally use the *rougher* flags for cuts and round the edges of patios,but a lot will depend on the skill and judgement of your builder,ask to see some of his/her recent work
if you dont want any trips at all pressed concrete would be ideal for you,little bland though

There is so much choice with riven paving that it's not actually all that difficult to track down a type with only minor surface variation that would be eminently suitable for patio use. I would suggest you visit a few suppliers to see what they have on offer.
