I have to build a circular patio of approx' 7.5 M in diameter. Mosts kits i have seen are a maximum of 4M.
Would buying extra outer rings and laying at intervals in between square slabs help, or is the only way over this problem by cutting the rest?

Depends very much on the type of flags being laid. With some rnages, you can extend cicrles by creating outer rings of smaller flags, let's say a 300x300 or a 450x300mm, and then, as the radius increases, you can use progressively larger flags without reaching a point where joint width becomes excessive.

Do you know which flags you plan to use?

Check out Westminster stone range of re-pro flags. To my knowledge they do the largest dia. circle kit available, as far as I can remember at least to 21' so pretty close to your requirement.
Available in a range of colours.
Link available from suppliers page.
Ability.
