32ft x 8ft patio area. 6ft high fence and house on long sides, garage walls on short sides.

OK, to make this area look wider and bigger, what would the best size slabs be?

Not just a matter of slab size to make a difference. You would benifit from breaking the area up into spaces, relate these to patio doors, access routes to house etc.
Maybe indroduce two paving types, to define spaces, but not to fussy.
Could utilise gravel, planters etc to add to enhancement.
You not going to create a bigger space, just create a more visually interesting and comfortable one.
Thats where the skill of garden designers can come worthwhile, to make the best of often unsual or challanging spaces.

As a quick, off-the-top-of-me-head idea, I'd suggest mixing flags with courses of block pavers, and use the block pavers to draw the line along the 8 fopot line, making it look longer, and across the 32 ft line, making it look shorter.
