plants to go in 5mm gaps between brick pavers ?

I am looking for advice on this: Laying 60sqm of reclaimed stable yard bricks, on type 1, on grit sand. But I want to leave 5mm joints to fill with "soil" in order to let small plants grow to make the appearance softer and to assist rain dissipation. Any advice? or warnings? or recommendations?
