Going to start laying the blocks tommorow but will no where near be finished, should i concentrate on having all the blocks laid with cutting out finished and sand swept in to the joint and compacted or will the blocks hold for a couple of days until i get out there again?

Concentrate on covering as much of the ground as possible with full blocks. No real harm will come to it for a couple of days if you leave the cutting-IN until the weekend.
