Is it possible to have a 10mm joint when laying clay brick pavors on a sand bed? If not, is than an alternative bedding type for a 10mm joint to a pedestrian traffic area?

The max recommended joint width is 5mm. Anything wider means problems, and the solution depends on the type of paving and the use to which it is put. 10mm joints on a flexible, unbound laying course usually means BIG trouble.
