hello

Can you lay edge courses straight on top of grit sand if all 4 sides are next to a wall (rectangular shape) and not bother with a mortar bed??

Yes you can but,

It is much harder to use the edge as a screeding guide without disturbing them.

If you screed the entire area then no mortar is needed at the edges.
