I have an old granite step which is very nice in every way but in places there is some old concrete attached. The big bits chip off but some is more engrained. Are there any chemincals I can use to weaken and remove the old concrete.

Brick cleaning acid aka cement cleaning acid aka Patio Cleaner aka hydrochloric acid aka muriatic acid.

It's all the same stuff, more or less, and reacts with the calcium carbonate in the cement to drastically weaken the concrete to the point where it cabn be brushed away with a bit of elbow grease. It's sold by most good BMs for around 5-10 quid per 5litre container. READ THE INSTRUCTIONS!!! :)
