Cover if you want but wouldn't be to concerned.
Your haunching will be fine but if you have some stone left over a concrete mix would be better but not essential.
Weatherpoint has to be used wet so dont worry about the weather. Give the paving a good soaking dump the 365 out, give it a good soaking too, brush it in.

It's hammering down here so covered with a tarp.
I've got 1 bag of ballast, do u think a 50/50 ballast sharp sand mix would suffice?
