With regards the pointing because so many of the joints are already topped out you'll have to take a grinder to them so you can make room for the pointing mortar.

Thanks. Spent the weekend raking it out to over 5mm depth with a screw driver dust pan and brush

5mm i s a bit tight rake really should be 10-15mm at least
henry hoover is ideal for hoovering all the gunk out of the joints
