how important is the +/-10mm tollerance when the sub base is whackered out?

Depends on the job in hand.

It's well worth aiming to achieve that degree of tolerance, but, if the project is just your patio or driveway and you're not overly concerned with perfection, then a tolerance of 15mm would be acceptable. However, try to avoid having a bedding layer more than 50mm thick if at all possible - excessively deep/thick bedding layers are often implicated in settlement and movement.
