When laying muti sized random paving, be it Indian, Yorkstone or whatever It has always been my practice to lay it in a fashion so that there are no cross '+' joints and no straight lines that cross more than three joints. The rationale being that the eye is drawn to these and distracts from the finished result. This said I don't think I have seen one laying pattern supplied by a supplier that takes this into consideration. Other contractors I have seen also seem not to worry about it.

So...am I anal?

It does look better but it's a little more time consuming and I have never met a customer who has complained about crosses or long joints. The only reason they have ever noticed anything like that is if I have pointed it out

I must admit, i have done a few patios with cross joints years ago, i dont find it any more difficult tbh

I prefer to lay it with out long straight joints or crosses, but when the gaffer and your foreman are on your case to "just get it down" then sometimes you just gotta get on with it. Especially when you get a crate of slabs with a serious amount of 2x2 and 3x2s cos they 'get it covered quicker' :0
