I'm looking into trying out these paving stones called 'Cobble Stones" : (http://www.cindercrete.com/Web/Landscap ... stones.htm)...

Any neat ideas or suggestions on what pattern I should use (pattern to lay the bricks)?

Personally
I like the fan patterns - there are some brilliant examples of this in Halifax Town Centre.

These are a 3:2 ratio block, so you can make herringbones, coursework, or weave patterns to suit. I can't tell you which is best, as it's a matter of personal taste and matching in with the buildings and the local area.

I've uploaded a few suggestions to this page
