Patio flagstones (slabs), concrete flags, stone flags including yorkstone and imported flagstones.

I would like to make up a batch of mortar, to fill between some concrete pavings that I have just laid. Please could someone tell me what mix I should use, and should I be using sharp sand or soft builders sand?
In the past when I have made up the mortar, I have used sharp sand, but the resultant mortar when hard is almost white in colour, which looks really odd.
These pavings have just a hint of very light brown in them, Is there any way I could get the mortar to go a similar colour?
