I am planning to lay some natural stone flags from Stoneflair. I estimate around 3 large Patio Packs. They recommend that a full mortar bed is used whereas on this site it states that a grit sand bedding layer is sufficient Could someone please clarify as I would like to use the non mortar bed if possible

Good old Stoneflair. They're not alone, though. For some reason, perfectly sensible and professional landscaping product suppliers come over all 'Ground Force' when they write their installation guides.

They're wrong, this site is right. Follow the advice on the main site for individual bedding.

it says grit sand with cement bedding layer if you read it right
i prefer gritsand/cement wet mortar mix for indian stone
works fine for me

Grit sand with cement is a mortar, technically. While you could use a clean grit sand bed (ie; no cement) most people find a sand/cement mix (ie: a mortar) to be easier to work with for patios.
