I have a irregular stone wall boundary and fitting the Edge course to the proflle needs a lots of skill and time. I am wondering if it is all right just cut a strightline on the paving blocks and after putting down a stright line of edge course, just to haunch them up with some cement between the gaps of Stone wall and edge course?

You can fit the edge course last, but it still needs top be laid on a concrete bed. Relying on a fillet of mortar between the back and the wall is bad practice and likely to fail in the medium-long term.
