Pointing - Pointing sandstone flags

Hi All
I have lid about 10m2 of indian sansstone using the 10.1 dry mix. Unfortunately the weather is bad so have not pointed. I am using romex so my understanding is that a delay will not have an adverse effect. Secondly one or two of the flags are uneven would you recommend lifting them and adding some sand cement mix to level them.

1 - no problem in hanging fire with the pointing until the weather improves (if ever)

2 - yes: lift and re-lay. Chisel ot the old bedding and replace it with fresh.
