How to leave paving section - Paving in sections

Patio flagstones (slabs), concrete flags, stone flags including yorkstone and imported flagstones.

I am new to the DIY Paving game and have a query.
I want to pave a large area with Natural Limestone.
I have laid & compacted the sub-base.
It is quite a large area and I will not be able to finish paving it in one day at the speed I will take.
My question is how do I leave the installed edge ready for continuing 16 hours or so later?
Squared off and apply fresh mortar against the previous days work?
Under cut the edge so that fresh mortar can key in?
Something else?
Any direction would be appreciated.
