Advice please - Planning awkward fall and setting out

First time on here so please be gentle.
I’m planning on laying a patio to rear of house. There is a conservatory that covers half the width. I want to lay a patio on other half but also continue round front of conservatory and other side of it .. ( I guess a wrap round the conservatory )
With regards to the falls :
How do I set the falls, with the main bit to side of conservatory Do I keep the flags level on both the house and conservatory and try and create the fall somehow or do I have them level along house and the fall going away from house and along conservatory ( but worried this will be noticeable to the eye)
If I could work out how to add a picture it would help show what I mean 😂
Any help advice would be greatly appreciated
