just laying indian sandstone riven but calibrated , finding some are for example at least 10mm longer or wider , how does one accommodate such a big variance when laying when gap between is normally around 10mm , would it be ok to trim down some of these and if so would i need to cut at same angle /camber ? sizes im using are 275x275, 275x560,560x560 and 560x845

Are you saying the flags are out of plan size tolerance (should be within ± 3mm) or is it the joint widths that are causing you problems?
If the flags are oversize, get on to the supplier, but if it’s the joint widths, there’s a page dealing with joint balancing
